Ingredients

  • 1/8 cup powdered monkfruit sweetener
  • 1/4 cup water
  • 1 cup frozen pineapple chunks
  • 4 oz pineapple juice
  • 3 tbsp coconut cream
  • 2 oz light rum
  • 3-4 ice cubes
  • Garnish: Fresh pineapple slices

Instructions

  1. In a small skillet, combine the powdered monkfruit sweetener and water, heat until the sweetener dissolves completely, then set aside to cool.
  2. In a blender, combine the frozen pineapple, pineapple juice, coconut cream, rum, and one-quarter cup simple syrup. Blend until smooth.
  3. Gradually add the ice while blending until the desired consistency is reached.
  4. Taste and add additional simple syrup if desired, then blend for another 30 seconds to combine.
