Ingredients

  • 2 oz demerara rum
  • 1 oz lime juice
  • 3/4 oz rich simple syrup (2:1)
  • Small handful of mint
  • 2-4 dashes Angostura bitters
  • Mint sprigs for garnish
  • Crushed ice

Instructions

  1. Prepare the rich simple syrup by simmering 2 cups of demerara sugar with 1 cup of water until the sugar has dissolved. Let it cool and store it in the refrigerator.
  2. In a cocktail shaker, muddle mint, lime, and simple syrup.
  3. Add the demerara rum to the shaker, then give it a quick shake and pour it into a tall glass.
  4. Press the mint into the bottom of the glass and fill it with crushed ice.
  5. Use a bars spoon or swizzle stick to gently twirl the drink until frost forms on the outside of the glass.
  6. Add 2-4 dashes of Angostura bitters and top with additional ice.
  7. Garnish with a generous bouquet of mint and enjoy!
