Ingredients

  • 1 cup Sugar
  • 1 cup Water
  • 3 Cinnamon sticks
  • 6 Cardamom Pods, lightly crushed (or 1/2 teaspoon ground)
  • 1/2 teaspoon Nutmeg (freshly grated)
  • 1 Vanilla Bean
  • Juice of 2 Lemons
  • Juice of 1/2 Lemon
  • 1 Egg White
  • 1/2 ounce Spiced Lemon Vanilla Simple Syrup
  • 2 ounces Gin
  • Ice
  • Whole Cardamom Pod, to garnish

Instructions

  1. In a saucepan, combine sugar, water, cinnamon sticks, cardamom pods, nutmeg, vanilla bean, and lemon juice. Bring to a boil, then simmer for 8 minutes. Remove from heat and let it sit for 1 hour.
  2. Strain the syrup through a fine mesh strainer and discard the solids. Store the syrup in the refrigerator.
  3. In a cocktail shaker, combine the lemon juice, egg white, simple syrup, and gin. Shake for 20 seconds.
  4. Add ice to the shaker and shake again until chilled.
  5. Strain the mixture into a coupe glass and garnish with a cardamom pod or lemon twist.
