Sicilian Sunset Spritz
A frozen variation of the classic Aperol Spritz, the Sicilian Sunset Spritz is a delightful, slushy cocktail made with freshly squeezed orange and lemon juices, bitter orange liquor, and prosecco.
Ingredients
- 1/2 cup freshly squeezed orange juice
- 1 1/2 teaspoon freshly squeezed lemon juice
- 2 1/2 tablespoons sugar
- Pinch of salt
- 1/4 cup bitter orange liquor (such as Aperol)
- 6 oz prosecco
Instructions
- In a small saucepan, combine the orange juice, lemon juice, sugar, and salt.
- Warm the mixture over medium heat, stirring until the sugar is dissolved.
- Remove from heat and stir in the bitter orange liquor. Let it cool completely.
- Pour the mixture into an 8-inch baking dish and freeze for at least 4 hours until completely frozen.
- Use a fork to scrape the surface of the frozen mixture to form large ice shards.
- Spoon about 1/2 cup of the frozen mixture into a coupe glass and top with prosecco.
