A frozen variation of the classic Aperol Spritz, the Sicilian Sunset Spritz is a delightful, slushy cocktail made with freshly squeezed orange and lemon juices, bitter orange liquor, and prosecco.

Ingredients

  • 1/2 cup freshly squeezed orange juice
  • 1 1/2 teaspoon freshly squeezed lemon juice
  • 2 1/2 tablespoons sugar
  • Pinch of salt
  • 1/4 cup bitter orange liquor (such as Aperol)
  • 6 oz prosecco

Instructions

  1. In a small saucepan, combine the orange juice, lemon juice, sugar, and salt.
  2. Warm the mixture over medium heat, stirring until the sugar is dissolved.
  3. Remove from heat and stir in the bitter orange liquor. Let it cool completely.
  4. Pour the mixture into an 8-inch baking dish and freeze for at least 4 hours until completely frozen.
  5. Use a fork to scrape the surface of the frozen mixture to form large ice shards.
  6. Spoon about 1/2 cup of the frozen mixture into a coupe glass and top with prosecco.
