Ingredients

  • 1/2 small seedless cucumber
  • 1 tablespoon roughly chopped fresh mint leaves
  • 1/2 tablespoon roughly chopped fresh basil leaves
  • 1 teaspoon honey
  • 2 oz vodka, chilled
  • 3 oz prosecco, chilled
  • Small sprigs of mint and/or basil for garnish

Instructions

  1. Cut the cucumber in half. Slice one half into circles and set aside in the refrigerator.
  2. Peel the other half, slice it in half lengthwise, scrape out the seeds, and cut it into chunks.
  3. Place the chunks of cucumber, mint, basil, and honey in a food processor or blender.
  4. Add the chilled vodka and blend until smooth, running the motor for at least 30 seconds.
  5. Refrigerate the puree for at least 1 hour until chilled.
  6. Pour the chilled puree into a pitcher and then pour in the prosecco.
  7. Serve in the glass of your choice over ice, with the cucumber slices and additional sprigs of fresh herbs for garnish.
