Ingredients

  • 1/2 pomegranate (arils removed)
  • 2 tsp granulated sugar
  • 1 oz gin
  • 1/2 oz pomegranate juice
  • 1 rosemary stalk
  • 3 oz good-quality champagne (chilled)
  • fresh rosemary for garnish

Instructions

  1. Place the pomegranate arils into a serving glass and set aside.
  2. In a saucepan over medium-high heat, combine the granulated sugar, gin, and pomegranate juice.
  3. Add the rosemary stalk after releasing the essential oils by pinching and twisting it.
  4. Bring the mixture to a boil, stirring to dissolve the sugar. Once dissolved, remove from the heat and allow to cool, leaving the rosemary in the liquid to steep.
  5. Strain the simple syrup into a glass container and set aside until ready to use.
  6. Spoon 1-2 tsp of the pomegranate arils into the glass.
  7. Pour 1 1/2 - 2 tsp of the simple syrup into the glass, depending on sweetness preference.
  8. Fill the glass with champagne up to the rim.
  9. Gently stir the cocktail with a bruised stem of rosemary and garnish the glass with the stem.
