Ingredients

  • 1 medium ripe white peach
  • 3.50 oz chilled Prosecco

Instructions

  1. Rinse the peach with water and bring a large saucepan of water to a boil.
  2. Once boiling, add the peach and boil for about 30 seconds.
  3. Use a slotted spoon to transfer the peach to an ice water bath.
  4. Once the peach is cool enough to handle, gently peel away the skin.
  5. Cut the peach in half, remove the pit, and slice.
  6. Add the peach slices to a food processor or blender and blend until smooth.
  7. Place the peach purée in the refrigerator for at least 30 minutes to cool.
  8. When ready to serve, pour 1/4 cup of the chilled peach purée into a Champagne flute.
  9. Gently pour in the chilled Prosecco, being careful not to overflow the glass.
  10. Stir with a spoon to combine and top it off with another splash of Prosecco.
  11. Serve with a peach slice, if desired.
