Ingredients
- 1 medium ripe white peach
- 3.50 oz chilled Prosecco
Instructions
- Rinse the peach with water and bring a large saucepan of water to a boil.
- Once boiling, add the peach and boil for about 30 seconds.
- Use a slotted spoon to transfer the peach to an ice water bath.
- Once the peach is cool enough to handle, gently peel away the skin.
- Cut the peach in half, remove the pit, and slice.
- Add the peach slices to a food processor or blender and blend until smooth.
- Place the peach purée in the refrigerator for at least 30 minutes to cool.
- When ready to serve, pour 1/4 cup of the chilled peach purée into a Champagne flute.
- Gently pour in the chilled Prosecco, being careful not to overflow the glass.
- Stir with a spoon to combine and top it off with another splash of Prosecco.
- Serve with a peach slice, if desired.
