Ingredients

  • 1 egg yolk
  • 1 tablespoon monk fruit sweetener
  • 3 tablespoons almond milk
  • 3 tablespoons heavy cream
  • 2 tablespoons dark rum
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon
  • A pinch of ground nutmeg

Instructions

  1. Beat the egg yolk until it turns a golden color.
  2. Add the monk fruit sweetener and vanilla extract, then mix thoroughly.
  3. In a saucepan, heat the almond milk and heavy cream until they gently come to a boil.
  4. Slowly pour the heated milk mixture into the egg yolk mixture, whisking as you add.
  5. Add the ground cinnamon to the mixture.
  6. Return the mixture to the saucepan over medium heat and whisk until it starts to gently thicken.
  7. Remove from the heat and stir in the dark rum.
