Ingredients

  • 1 lemon
  • 1/3 cup vodka
  • 3/4 cup half and half
  • 1/4 teaspoon vanilla extract
  • 1/3 cup sugar

Instructions

  1. Use a vegetable peeler to strip the lemon peel in long pieces, avoiding the bitter white pith.
  2. Place the lemon peels in a pitcher and pour the vodka over them. Cover with plastic wrap and let it steep at room temperature for 3 to 4 days.
  3. In a saucepan over medium-low heat, stir the half and half, vanilla extract, and sugar until the sugar dissolves completely. Do not boil the mixture. Remove from heat and cool to room temperature.
  4. Discard the lemon peels from the vodka, then stir in the cooled syrup.
  5. Transfer the limoncello to a bottle, seal, and refrigerate until cold.
  6. Serve chilled and enjoy!
