Ingredients
- 1 lemon
- 1/3 cup vodka
- 3/4 cup half and half
- 1/4 teaspoon vanilla extract
- 1/3 cup sugar
Instructions
- Use a vegetable peeler to strip the lemon peel in long pieces, avoiding the bitter white pith.
- Place the lemon peels in a pitcher and pour the vodka over them. Cover with plastic wrap and let it steep at room temperature for 3 to 4 days.
- In a saucepan over medium-low heat, stir the half and half, vanilla extract, and sugar until the sugar dissolves completely. Do not boil the mixture. Remove from heat and cool to room temperature.
- Discard the lemon peels from the vodka, then stir in the cooled syrup.
- Transfer the limoncello to a bottle, seal, and refrigerate until cold.
- Serve chilled and enjoy!
