Ingredients
- 2 tbsp sugar
- 1/4 cup water
- 1/2 tbsp juniper berries, crushed
- 3 oz dry sparkling wine, such as Prosecco
- Pine sprig, for serving
Instructions
- In a small pot, combine sugar, water, and crushed juniper berries, and bring to a simmer, stirring until the sugar is dissolved.
- Remove the pot from the heat and let the mixture cool completely.
- Strain the syrup through a fine-mesh sieve to remove the solids, then refrigerate for at least 1 hour or up to 1 week.
- For each cocktail, pour 3 tablespoons of the juniper syrup into a glass and add 1/2 cup of sparkling wine.
- Garnish with a pine sprig and serve immediately.
