Ingredients

  • 1 large very fresh farm egg
  • 2 tbsp sugar
  • 1/2 cup whole milk
  • 2 tbsp heavy whipping cream
  • Garnish: fresh grated nutmeg

Instructions

  1. Carefully separate the egg yolk from the white and refrigerate the egg white.
  2. In a medium bowl, whisk together the egg yolk and sugar until smooth.
  3. Slowly whisk in the milk and cream into the egg yolk mixture.
  4. In another medium bowl, whisk the egg white until frothy.
  5. Gently fold two-thirds of the frothy egg white mixture into the yolk mixture.
  6. Discard the remaining one-third of the egg white mixture.
  7. Garnish with freshly grated nutmeg, if desired.
  8. Store sealed in a glass jar in the refrigerator for up to 1 day. Shake the jar before mixing cocktails.
