Ingredients

  • 1 cup whole milk
  • 1/4 cinnamon stick
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon pure vanilla extract
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream
  • A pinch of ground cinnamon for topping (optional)

Instructions

  1. In a medium saucepan over low heat, combine whole milk, ground nutmeg, and pure vanilla extract.
  2. Add the quarter cinnamon stick and bring the mixture to a low boil (3-4 min).
  3. In a separate bowl, whisk together the egg yolks and granulated sugar until the yolks become pale in color.
  4. Gradually add a spoonful of the hot milk mixture to the egg yolks and sugar, mixing well after each addition.
  5. Slowly pour in the remaining hot milk mixture, whisking constantly.
  6. Pour the mixture back into the saucepan and cook over medium heat until it thickens enough to coat the back of a spoon.
  7. Remove from heat and stir in the heavy cream.
  8. Chill the eggnog until ready to serve.
  9. Serve with a sprinkle of ground cinnamon, a cinnamon stick, or a dollop of whipped cream.
