Ingredients
- 1 cup whole milk
- 1/4 cinnamon stick
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon pure vanilla extract
- 3 large egg yolks
- 1/4 cup granulated sugar
- 1/2 cup heavy cream
- A pinch of ground cinnamon for topping (optional)
Instructions
- In a medium saucepan over low heat, combine whole milk, ground nutmeg, and pure vanilla extract.
- Add the quarter cinnamon stick and bring the mixture to a low boil (3-4 min).
- In a separate bowl, whisk together the egg yolks and granulated sugar until the yolks become pale in color.
- Gradually add a spoonful of the hot milk mixture to the egg yolks and sugar, mixing well after each addition.
- Slowly pour in the remaining hot milk mixture, whisking constantly.
- Pour the mixture back into the saucepan and cook over medium heat until it thickens enough to coat the back of a spoon.
- Remove from heat and stir in the heavy cream.
- Chill the eggnog until ready to serve.
- Serve with a sprinkle of ground cinnamon, a cinnamon stick, or a dollop of whipped cream.
