Ingredients

  • 1/4 cup heavy cream
  • 1 large egg yolk
  • 1 tablespoon sugar
  • 1/2 cup whole milk
  • Pinch of salt
  • 1 tablespoon dark rum
  • Pinch of ground nutmeg, plus extra for serving

Instructions

  1. In a medium bowl, whisk together 1/4 cup cream, egg yolk, and sugar until pale yellow and thoroughly combined.
  2. In a saucepan, bring the milk and salt to a simmer over medium-high heat.
  3. Slowly pour the hot milk into the yolk mixture while whisking constantly to temper the eggs.
  4. Return the milk-yolk mixture to the saucepan and cook over medium-low heat, whisking constantly, until it reaches 160 degrees, about 1 to 2 minutes.
  5. Pour the eggnog into a clean bowl, then stir in the rum and nutmeg.
  6. Place the bowl in a larger bowl filled with ice and refrigerate until the eggnog reaches 40 degrees, stirring occasionally, for 1 to 2 hours.
  7. Just before serving, whip the remaining 1/4 cup cream until soft peaks form, then fold it into the chilled eggnog. Serve garnished with extra nutmeg.
