Ingredients

  • 1/4 cup fresh or frozen blackberries
  • 3 tablespoons sugar (or Monkfruit sweetener)
  • 1/4 cup water
  • 1 mint leaf
  • Juice of 1/2 lime
  • Club soda
  • Ice

Instructions

  1. In a small saucepan, combine the blackberries, sugar, and water. Bring the mixture to a boil, then simmer for 10 minutes.
  2. Remove the saucepan from heat and let the mixture cool to room temperature.
  3. Strain the blackberry syrup through a fine mesh strainer into a glass container. The syrup can be stored in the fridge for a couple of days.
  4. To make one drink, pour 3 tablespoons of the blackberry simple syrup into the bottom of a shaker. Add in the juice of 1/2 a lime and a mint leaf. Muddle the mixture together with a muddler or the handle of a wooden spoon.
  5. Add a handful of ice to the shaker and shake the mix a few times.
  6. Fill a highball glass with ice and pour the contents of the shaker in. Top with club soda and enjoy!
