Ingredients

  • 2 oz Gin (Traditional or London Dry)
  • 2 oz Aperol
  • 1.50 oz Lemon juice
  • 1 Tbsp Maple syrup
  • 1 Egg white (large, free range)
  • 2 Rosemary springs

Instructions

  1. Release the oils and aroma from 2 rosemary sprigs by clapping them in the palm of your hand.
  2. Place the rosemary sprigs in a cocktail shaker and add the gin, Aperol, lemon juice, maple syrup, and egg white.
  3. Secure the lid and shake vigorously without ice for 30 seconds.
  4. Add ice and shake for another 30-40 seconds.
  5. Strain the mixture into a glass and garnish with the remaining rosemary sprig.
