Ingredients
- 2 oz Gin (Traditional or London Dry)
- 2 oz Aperol
- 1.50 oz Lemon juice
- 1 Tbsp Maple syrup
- 1 Egg white (large, free range)
- 2 Rosemary springs
Instructions
- Release the oils and aroma from 2 rosemary sprigs by clapping them in the palm of your hand.
- Place the rosemary sprigs in a cocktail shaker and add the gin, Aperol, lemon juice, maple syrup, and egg white.
- Secure the lid and shake vigorously without ice for 30 seconds.
- Add ice and shake for another 30-40 seconds.
- Strain the mixture into a glass and garnish with the remaining rosemary sprig.
