Ingredients

  • 2 oz. Gin (Traditional or London Dry)
  • 2 oz. Aperol
  • 1.50 oz. Lemon juice
  • 1 tbsp Maple syrup
  • 1 Egg white (large, free range)
  • 2 Rosemary sprigs

Instructions

  1. Gently clap the rosemary sprigs in the palm of one hand to release oils and aroma.
  2. Place 1 sprig into a cocktail shaker and add the gin, Aperol, lemon juice, maple syrup, and egg white.
  3. Secure the lid and shake vigorously without ice for 30 seconds.
  4. Add ice to the shaker and shake for another 30-40 seconds.
