Ingredients

  • 1 oz tequila, preferably Tequila Cabeza
  • 3/4 oz Suze
  • 1/2 oz Cardamaro
  • 1/2 oz malic acid solution
  • 1/2 oz rosé syrup
  • 1/2 oz aquafaba

Instructions

  1. Combine all ingredients in a mixing tin and shake without ice.
  2. Add ice, and shake again quickly.
  3. Strain into a chilled coupe glass.
  4. Garnish with fennel pollen and raspberry dust.
